  • i received 3 emails this morning wishing me happy holidays; i wish i didn't
  • no intake today; rather a room temp sapporo
  • sourdough recipe:
    • 100% t85.       400 grams
      70% water.      280 grams
      10-20% starter 40-80 grams
      2% salt             8 grams (basically every kind of dough should have 2% salt)
  • it is now 2:32 pm
  • i'm sleepy
